In line with all current allergen legislation and requirements, you will learn how to keep all customers safe when preparing, cooking and serving all food types.

You will learn all new information regarding Natasha's law, how to handle all food allergens effectively within the hospitality industry as well as how to provide allergen information to customers for both pre-packed and non prepacked food and beverage. You will also gain information and knowledge around the 14 allergens.

At the end of this one day course you will achieve Highfield Level 2 Award in Food Allergen Awareness and Control in Catering.

Daily tasks:

  • Makes cake decorations, spreads icing, fillings and toppings on products.
  • Bakes bread, pastry and cakes.
  • Fills and glazes pastry, mixes ingredients for cakes.
  • Rolls and cuts pastry, stretches, kneads and moulds dough to form bread, rolls and buns.
  • Mixes ingredients using hand or machine to obtain the required consistency.
  • Weighs ingredients according to recipe.
