This course will teach you about the fundamental cooking methods and develop your practical skills and knowledge for a career in the hospitality and catering industry.

Students will learn both kitchen and front of house skills through several methods of delivery to give you the best experience possible.

Who is course for

This course is for anyone who has a passion for cooking and an interest in working in the hospitality and catering industry either as a chef or in a  Front of House role

Foundation employability skills will be worked on throughout the year so that you are fully aware of the expectation of employers when you do begin your career and so that you progress to be a solid Level 2 student.

studying english and maths as part of your programme of study will also form an important part of your course. These are the skills we use in all aspects of your study, work and everyday life.

Assessment Methods

Practical elements of the course are assessed by examination throughout the year . End of year exams in pastry and kitchen and larder are marked by industry chefs so students have a real idea of the skills they have developed in their first year in readiness to progress to Level 2. Theory work is assessed by assignment some of which are tied into industry focused projects to aid development and understanding and give students a true feel for the industry.

Progression Opportunities

Successful students may progress onto Level 2 Diploma in Food Professional Cookery, L2 Diploma in Hospitality , Level 2 Diploma in Patisserie . Students may wish to apply for a Level 2 Apprenticeship in any of the above disciplines.

Career Opportunities

After further training many students become Kitchen Technicians, Commis Chefs/Food service operatives.

Entry Requirements

You should have an interest in Food Preparation and Cooking; or a Certificate in Hospitality and Catering;

  • 4 GCSEs Grade D ( English or Maths essential ) supported by a reference from your school
  • Students must have full uniform, no later than 2 weeks after the start of Academic year
  • Due to food safety and awarding body requirements during practical sessions all students must remove all visible jewellery, including facial piercing and keep nails short and polish free
  • Wear professional dress for practical sessions
  • Have full dexterity and have a good standard of personal hygiene
  • To be able to stand for long periods of time (support arrangements can be put in place if required)
  • Be able to communicate and work effectively with others
  • If English is not your first language, an IELTS score of 5 is required.

Additional Course Costs

There will be several educational visits associated with this course and students are expected to contribute £125. £75 payable during induction and £75  payable by 1 November. Please note that you will be required to wear a uniform. You will have to pay for your uniform (approx £180).and for course items such as stationery, books and equipment. We may be able to help you with these and also with related costs of coming to college such as travel and childcare. 16 to 18s

Tuition is free for learners aged 16 to 18. A learner will continue to be eligible for free tuition for the duration of their qualification, this includes Year 2 of a qualification if the learner was aged 16-18 when they started in Year 1. Additional financial support may also be available for full-time learners, please call our Student Services team on 0191 200 4000 for more information.
