Overview

This course is for anyone with a passion or strong interest in bakery ,patisserie and confectionery .You will develop your practical skills and knowledge for a career in bakery patisserie and confectionery through an engaging industry focused course .

Practical skills will be constantly developed through skills classes as well as production sessions underpinned by week to week industry engagement to help you develop your skills set and confidence .A one day a week six month placement opens your eyes to the opportunities available in industry as skills are developed  by a challenging college curriculum .

Practical exams throughout the year as well as end of year exams  assessed by Tutors and industry experts stretch and challenge students.

Theory classes engage and challenge learners to think about emerging trends in industry to ensure that they leave College at Level 3 with an opinion and educated view on the industry in which they will work.

Who is course for

This course is for passionate,motivated and focused students who have a desire to work in one or more of these disciplines of the Hospitality Industry .Academically students should have  achieved 4 GCSES at Grade C ,a Level 1 VRQ in Food Preparation and Cooking or Level 1 in Hospitality and Catering (with relevant references),or who has had at least two years relevant industrial experience in Bakery, Patisserie or Confectionery.

Qualification Gained

CGLI Level 2 Certificate in Professional Patisserie and Confectionery.

• Food safety in catering
• Health and safety in catering
• Healthier food and special diets
• Kitchen operations, cost and menu planning
• Applying work place skills

Practical areas:

• Produce Hot & Cold Desserts and Puddings
• Produce Paste Products
• Produce Biscuit , Cake and Sponge Products
• Produce Fermented Dough Products

Assessment Methods

Practical work is assessed by examination throughout the year graded at pass,merit and distinction which gives students the opportunity to showcase and develop their abilities. End of year exams are marked by tutors and industry experts to ensure the quality and validate the skills developed whilst on the course.Theory subjects are assessed by assignment as well exam and are again graded to show perspective employers the quality of individual students work .

Progression Opportunities

Successful students may progress onto Level 3 Diploma in Professional Patisserie and Confectionery subject to satisfactory reference from Level 2 Tutor. Students may also progress directly onto a Level 3 apprenticeship in industry . Successful completion of either of these programmes could lead on to Level 4/5  Foundation Degree in Hospitality Management .

Career Opportunities

Once qualified to Level 3 opportunities available to students are local,national and international . Previous students are now working in the Restaurant and Hotel Industry,bakeries,or have gone on to open their own businesses.

Entry Requirements

• You should have at least 4 GCSE grade C including English or Maths or a Level 1 Food Preparation and Cooking; or a Level 1 Certificate in Hospitality and Catering (with industry or college references); or two years relevant industrial experience.
• Students must have full uniform including a suitable knife set, at the start of the Academic year
• Due to food safety and awarding body requirements during practical sessions all students must remove all visible jewellery, including facial piercing and keep nails short and polish free
• Wear professional dress for practical sessions
• Have full dexterity and have a good standard of personal hygiene
• To be able to stand for long periods of time (support arrangements can be put in place if required)
• Be able to communicate and work effectively with others
• If English is not your first language, an English Language test score of 5 is required.

Additional Course Costs

Please note that you will be required to wear a uniform. You will have to pay for your uniform (approx £160).and for course items such as stationery, books and equipment. Students will also contribute £150 towards the cost of Educational visits which take place across the duration of the course  .We may be able to help you with these and also with related costs of coming to college such as travel and childcare. 16 to 18s

Tuition is free for learners aged 16 to 18. A learner will continue to be eligible for free tuition for the duration of their qualification, this includes Year 2 of a qualification if the learner was aged 16-18 when they started in Year 1. Additional financial support may also be available for full-time learners, please call our Student Services team on 0191 200 4000 for more information.
